Pickles & Peas is a new Mediterranean food truck concept serving family recipes from the chef’s native Lebanon with a unique twist.
We really nailed this truck inside and out. The kitchen is outstanding: ready to cook any meal you have on your mind. And just look at the outside! What a cool wrap!!! What a design!! The 48” American Range Oven provides plenty of room for the most demanding chef. On the top of the oven there’s a 36” Griddle and a 2-Burner also made by American Range. Next to the oven we have the fryer for those crispy fries and how could we leave out the 36” char broiler? No, we didn’t! It’s right next to the 2-Well Steam Table. Of course the chef had to get a Waring Panini Grill, a Waring Food Processor and a 60 Cup Winco Rice cooker with an extra fresh water tank for the rice. An overabundance of cooking appliances requires a bigger hood so it was outfitted with two exhausts. The ingredients are kept cold in a one door Atosa Refrigerator together with a 27” Atosa salad bar and the Frozen ingredients are stored in a 27” Under counter Atosa Freezer. The Drinks are kept nice and cold in the Turbo Air Drink Cooler. The Air Conditioning cools down the kitchen on those hot summer days. The truck is powered by a Cummins Onan generator. LED Lights were installed in the truck as well as the standard 3 Compartment sink, Hand Wash Sink, 6 Gallon Water Heater, 50 Gallon Fresh Water Tank, 80 Gallon Waste Water Tank, and Custom Built Cabinets and Shelves.
