How do you spot a Vietnamese food truck from miles away? By wrapping it in their national symbol – the Lotus flower. Not many people are familiar with the Lotus flower, but once they taste the food, we’re sure they will remember it forever. The truck started as a project to bring awareness to the growing demand for Vietnamese cuisine. The food preparation is handled by a Turbo Air Stove with 4 Burners, a 36” Turbo Air Griddle and a 2 Basket Dean Master Fryer. The rice is cooked in a Winco Rice cooker. All the cooking appliances are right next to each other for a smooth flow. The ingredients are stored in a one door Atosa Fridge. Next to the fridge is the 27” Salad Bar with the prep table and eight topping trays. The two-well Duke Steam Table keeps the food warm. Oops, did we say sweets and pies? The heated display cabinet is right behind the concession window for the customers to see their desserts. The Air Conditioning keeps the kitchen nice and cool and the whole kitchen is powered by a Cummins Onan Generator. Again, the hand wash sink, three compartment sink, 6 Gallon Water heater, 50 Gallon Fresh Water Tank, 80 Gallon Waste Water tank, custom made cabinets are all standard.
